This soup is a unique blend of all healthy items specifically galangal (Asian ginger) very much helpful in inflammation and pain, also a good antioxidant. Plus the goodness of coconut milk and lemongrass and kaffir lime.

Ingredients:
- Coconut milk –200 ml or 1 tetra pack
- Water –1 litre
- Asian ginger or Galangal – 2” piece cut into 6-8 pieces
- Lemongrass stalks –6 pieces
- Chillies small or Bird's eyes– 4 or according to your own liking
- Kaffir lime leaves –6 to 8 pieces
- Lemon juice – 3 tbsp
- Salt
Method:
- Mix all ingredients except lemon juice.
- Heat it together.
- Boil this to get a good flavour of all the herbs.
- Switch off the burner.
- Add lemon juice.
- The soup is ready!
Storage/serving suggestion
This soup is best for taste and health if served hot.
