Ingredients:

Finely chopped cucumber – 1 cup
Chopped coriander – ¼ cup
coarse roasted peanuts powder – 1 tbsp
Roughly chopped roasted peanuts – 1 tbsp
Minced chillies – ¼ tsp
Tadka of jeera and hing
Salt
Lemon juice – 2 tsp

Method:

Mix the cucumber, green chillies, coriander and lemon juice. Just add the peanuts powder, chopped peanuts and salt on the top of salad. Heat 1 tsp oil. Add jeera and when it splutters, add hing and switch off the gas. Pour this tadka over the salad. Mix just before serving and add 2 tsp of pumpkin seeds on top.
