Recipe features

This soup is a unique blend of all healthy items specifically galangal (Asian ginger) very much helpful in inflammation and pain, also a good antioxidant. Plus the goodness of coconut milk and lemongrass and kaffir lime.

Ingredients:

  • Coconut milk –200 ml or 1 tetra pack

  • Water –1 litre

  • Asian ginger or Galangal – 2” piece cut into 6-8 pieces

  • Lemongrass stalks –6 pieces

  • Chillies small or Bird's eyes– 4 or according to your own liking

  • Kaffir lime leaves –6 to 8 pieces

  • Lemon juice – 3 tbsp

  • Salt

Method:

  • Mix all ingredients except lemon juice.

  • Heat it together.

  • Boil this to get a good flavour of all the herbs.

  • Switch off the burner.

  • Add lemon juice.

  • The soup is ready!

Storage/serving suggestion

This soup is best for taste and health if served hot.
